Fried Plantains and Veggie Dip
I’m not the greatest cook. Actually, I’m not a cook at all. I have the ability to make dishes, literally, just to survive.
This morning, as I was looking for something to eat for brunch, my original idea of having eggs with avocado toast was not going to be possible. If I weren’t following a dairy-free diet, I would’ve reached for the cow milk (I also ran out of almond milk) and had either oatmeal or cereal.
I only had vegetables and green plantains to cook with. A few months back, one of my high school friends, who is now a vegan vlogger, shared a recipe where only plantains and vegetables are needed. I decided to give it a try. Although, my version does not contain as many vegetables or herbs as the original recipe–I was thrilled with the results.
Here are the ingredients that I used:
- 2 Small Tomatoes
- 2 Plantains
- 1 Red Bell Pepper
- 1 Large Onion
- Salt to Taste
- 1 Tablespoon of Apple Cider Vinegar
- Paprika to Taste
- 3 Cloves of Garlic
- Frying Oil for the Plantains
